A food grade filter aid, also known as diatomaceous earth (DE), which is mixed into the syrup before it is run though a filter press. The filter aid is collected by the filter papers in the press and helps create a super fine filter to remove the impurities out of the syrup. Without the use of filter aid, the papers will instantly plug up. Most producers that have trouble filtering, do not use enough filter aid.
